Low Fat Pineapple Cake

My daughter and I made a low fat pineapple cake for my husband’s birthday.  We substituted applesauce for the butter in the recipe and substituted 1/3 cup light soymilk and 2/3 cup pineapple juice for the milk in the recipe.  We divided the cake between two pans when it was baked, and placed pineapple rings on top of one of the layers before putting it into the oven.  That became the bottom layer.  We also made low fat chocolate icing to go on top.  It was delicious and we all enjoyed it!

  1. Its such as you read my mind! You seem to know so much about this, like you wrote the e book in it or something. I feel that you simply can do with a few % to power the message home a little bit, but instead of that, that is excellent blog. An excellent read. I will definitely be back.

  2. I am glad that you liked the low fat pineapple cake idea. Actually, I am in the process of writing a semi-vegetarian cookbook for busy families. I will add a new recipe or nutrition tip to the blog each month, so check back in around two weeks for the next tip!
