I recently made the most delicious lentil soup. My whole family enjoyed it, especially my son. This tasty soup is a great way to encourage children to eat more vegetables, especially since it will help to warm them up on a chilly day! The recipe is as follows:
1 onion, chopped
2 cloves garlic, chopped
2 potatoes, diced
1 carrot, sliced
1 stalk of celery, sliced
1 bag frozen lentils, approx. 10 oz
1/4 tsp black pepper
1 Tb red miso
5 cups of water
In a medium pot, saute the onions and garlic until browning starts.
Add the potatoes, carrots, and celery, and saute five more minutes.
Add the water, miso, and lentils, and garlic.
Bring to a boil.
Lower the flame, and simmer for twenty minutes.
